TASTING NOTE
Look
Color is ruby red with garnet reflections.
Smell
Aroma is fresh and captivating: floral scents of violet, fruity tones of raspberry and wild strawberry finish.
Taste
Palate is elegant, very persistent, and well-balanced by gentle tannins. Cherry notes and delicate spice reminiscent of white pepper and white moss. The mineral notes help to make it subtle, slender, and soft even in fruity, fresh finish that recalls the drink.
PAIRING
WINE – FOOD

The freshness, the fine and elegant tannins and the “fruity” aroma are a good match for an aperitif.
Tondo recalls the flavors of the wood and therefore it is excellent together with first and second courses using berries and undergrowth plants.
You can taste it, for example, with tagliatelle with truffles, porcini or deer stew with juniper and cranberries.
The excellent structure and spicy hints of white pepper and ginger go well with the meat dishes prepared with a wealth of aromatic herbs. Specifically, it is excellent with Italian traditional dishes such as lamb chops with thyme and Ischia rabbit but also with spicy foreign dishes. For example, some excellent combinations are Biryani or Tandoori chicken which are typical dishes of Indian cuisine.
The fruity notes of raspberry and wild strawberry add depth to sweet and sour dishes, such as a beef fillet with a reduction of balsamic vinegar.
The freshness and elegant tannins are a good match for many Asian dishes characterized by greasiness and abundant use of spices. Specifically, on the one hand tannins degrease the greasiness from the other the slim structure does not cover the spices used.
