WINE – FOOD
CL is a “meditation” wine because it is elegant, and it has an uncommon evolving.
So, we suggest you make a first tasting without any pairing.
Taste it in its complexity!
CL is a superb match for the umami taste of Italian dairy excellences (Parmigiano Reggiano, Grana Padano, and Pecorino), because it enhances their pleasantness. Tasted with oysters, caviar, and foie gras it brings out the taste creating an extraordinary pleasantness on the palate.
At the same time, the umami taste of CL, that is comes from the long aging on the lees, ennobles the deficient foods and enhancing them. This is the case of fish tartare such as sea bass, sea bream, squid.
The freshness, the light notes of mint and the fine perlage go well with succulent dishes such as a stuffed guinea fowl or a Catalan lobster.
CL paired with some traditional Russian dishes is exceptional thanks to the combination of freshness, complexity and sapidity.
CL handles the oiliness very well when combined with small breaded and fried Koryushka fish served with sauces and harmonizes perfectly with pirozhki (stuffed panzerotti).
