VINIFICATION: soft pressing with very low yields (65%).

FIRST FERMENTATION: autochthonous yeast (free-run must).

REFERMENTATION IN THE BOTTLE: selected yeast.

REFINEMENT ON YEASTS: > 180 months.       

RESIDUAL SUGAR CONTENT: < 1 g/l.

BOTTLE PRODUCED: ≈ 800.

BOTTLING: WITHOUT SULPHITES.

TASTING NOTE

Look

Color is bright, intense and shiny gold.

Foam is elegant and creamy.

Perlage is very fine, continuous, and persistent.

Smell

Aroma is very rich and complex. The attack is fresh on the notes of wild flowers opening to hints of ripe white fruits (apple and pear). The heady finish blends notes of pastry with hints of toasted fruits (hazelnuts, cashews and especially almonds).

Taste

Palate is fine and fresh. The texture is underlined by notes of hazelnuts and honey, spicy minerality, and a savoury finish.

The complexity and the excellent structure hold up succulent first courses such as Calabrian “pasta china” or Milanese risotto with “ossi buchi” (bone hole meat).

The heady and enveloping scent of the long aging on the yeasts is highlighted if tasted with shellfish such as lobsters, prawns, shrimp and squillas.

The effervescenze and fresh acidity go well together with full bodied traditional Italian main courses such as “coda alla vaccinara” or Piedmontese boiled meat.
